Brinjal Gravy






Ingredients :
 
Small Brinjals-10 pieces
Onion-3
Tomatoes-3 or 4
Garlic-15 pieces
Coriander leaves
Tamarind Juice - 2 tablespoon.
Chilly powder - add to taste.
Coriander powder - add to taste.
Salt - add to taste.

To Fry & Grind :

Onion-1
Tomato-1
Garlic-15 pieces
Fennel seeds-1spn

To Temper :

Mustard seeds
Oil
Currry leaves

Preparation :

1. Slice the brinjals into four pieces (not into separate pieces).



2. Marinate it with Salt, Tamarind juice, Coriander powder & Chilly powder.
3. Pour some oil in the pan and add the above ingredients mentioned under "To Fry & Grind".
4. Fry till the raw smell goes off, grind in mixer grinder & keep it separately.




5. Add the items under "To Temper" in a pan & add onions, fry till golden brown & add smashed tomatoes.



6. Add the marinated brinjals & saute.



7. Then add coriander powder, chilly powder & salt to taste.



8. Add the ground paste along with little water & fry till oil gets separated from the gravy.



9. Transfer it to a bowl & Garnish with coriander leaves & serve hot along with Roti, White rice or Curd rice.
